Boil a medium saucepan
of water; roughly slice a head of cauliflower. Or use a pound of macaroni,
or a few heads of brocolli, or some rocks, really, anything. Undercook
slightly: cauliflower about four minutes, macaroni look at the box and
subtract a minute or so.
While this is happening,
put 2 tbsp of butter in a pan, and when melted throw in 2 cups milk. Put
in about a cup and a half of white flour, two tablespoons at a time, mixing
well. If you get lumps, don't worry about it; just use the stick blender
to make them go away. When the mixture starts to thicken, throw in about
two or three cups of roughly chopped or shredded cheese, and stir until
it's melted. Take a glass pan, grease with olive oil. Drain the cauliflower,
put in the pan and cover with cheese. Put in 350F oven for half an hour;
to get more crust, put some spare cheese on top and put it under the broiler
for 3-5 minutes.
