Garam Assam
Garam is a Malay word which means "to be irresistible." The dish Garam Assam is known for its ability to stimulate one's appetite with its tangy sourish flavour.
Ingredients
- 0.6 kg fish or large shrimps
- 2 round tablespoons of tamarind ( assam ), add 30 oz. water, strain & use liquid only
- 2 tablespoons of sugar
- 2 tablespoons of salt
- 8 tabelspoons of oil
- Ingredients to be pounded together
- 10 slices lengkuas ( a root similar to ginger. Powdered form is available from most Thai grocery shop )
- Half tumbsize piece of tumeric
- 4 candlenuts or hazlenuts
- 20 shallots
- half tabelspoon of shrimpt paste
- 4 chillis
- 1 stalk lemon grass ( bruised )
Instructions to cook
- Over high flame, fry pounded ingredients in oil for 2 minutes
- Add in a little tamarind juice and stir fry for another minute
- Over high flame, add in the remaning tamarind juice, sugar and salt
- Bring to boil and add meat and simmer uncovered for 10 minutes
The above menu is served with steamed rice.
